I don't know, most of their stuff has left me wondering what's so impressive about it. I like their chipotle gouda, baby swiss (and that's mainly because PS baby swiss tastes like mildew) and cajun mayo a lot but everything else just isn't that impressive for the price they're asking for. In fact a lot of customers say some of the PS stuff is better. I just can't believe they're asking $10 per lb for ham, that's more expensive than some of our brands of roast beef.
The reason for the price essentially is because of its ingredients. They pride themselves on the 5 no's: no fillers, no trans-fat, no gluten (this one is an odd one), no artificial flavors, and another no which is slipping my mind right now. They also use the real breast meat for their turkey and chicken, the good parts for the beef and ham, etc. Their cheeses are sugar free, and I know of one (Lacey Swiss) which is lactose free (which is good for me since I love dairy, but dairy doesn't like me). I love Boar's Head products, and I do spend a bit on it once in a while. But it's just that--once in a while.
You're paying for quality. I know that I love handling BH meat more simply because it's not slimy as hell. Heritage Farms has the grossest deli meat ever because of how slimy it is.

So in other words, it's just meat and cheese, which is what it should be. Most people are willing to pay more for higher quality but there comes a point where the quality no longer justifies the cost. There's bad Swiss cheese. There's okay Swiss cheese. There's good Swiss cheese. There's very good Swiss cheese. There's excellent Swiss cheese. After a point, you really can't improve that much on a product. Also, there's probably less of a difference between the very good Swiss and the excellent Swiss than there is between the okay Swiss and the good Swiss. As the quality goes up, there's less and less improvement. The reason Boars Head is so high is because of its exclusivity. Stores must get an awful lot in kickbacks to agree to Boars Head's terms of not selling any other brand other than the store brand. Why is Boars Head so afraid of the competition?

The gluten thing isn't odd. Gluten is used as a filler in some meats like Heritage Farm (the reason why it's slimy.) They showed us the "filler" when we had to take those Boar's Head lessons - basically it was like some kind of gelatin-like substance made with wheat powder.
I don't see 10$ a lb to be extreme for the quality you are getting at all. That being said, I can't afford to have it often, but still that relates to my own income working in Kroger. lol Personally, I cannot stand to eat any "slimy" meats. That includes like 90% of the lunch meats you find pre-packaged, especially the cheaper options. I did like the Oscar Meyer carvables turkey & chicken, but they all got discontinued except for 2 kinds I don't like. Sad stories.

I actually think PS brand seems to be pretty quality? I work in the deli and I cut it and it doesn't seem to be slimy. We've had several customers tell us that for some of the meats they prefer PS. The PS black forest ham seems to be a lot more popular, for instance, and one that people tell us often is better than the boar's head one.

It's quality. Try to find a meat that has the same quality as BH for less than BH prices. It might be good in terms of tastes, but there are other things.
I know that if I had a choice, I'd buy the BH meat. Although there are a few PS meats that I'll eat if I had the option, like the maple honey turkey. I've only seen one Kroger around me that sells the PS version of that.
BH meat isn't immune to sliminess either. I opened a couple of hams that left me with goo on my hands. It felt like someone jizzed on the ham then wrapped it in Cryovac.
