We're not doing CAP right

Apparently we're suppose to mark off each item as we break it out.  Do they really think that I'm that stupid that I can't remember what I just broke out 5 seconds ago?  The guy asked, "How do you know it was done then?"  My reply was, "Well, you see the bread out there, don't you?  It didn't just magically appear."  Also, we're not making enough notations regarding changes.  If I make changes, I do it on the RF unit.  The only time I make changes on the CAP printout is if someone else is doing the baking.  Usually it's something along the lines of ran short, didn't come in, emptied the box, plus __ for customer order, etc.  I certainly don't need to tell myself I ran short on golden rolls.  

They want us to start doing our CAP for bread at night like other stores, but we don't have anybody at night who's competent enough to do so.  The bakers have always done the breakout and I've been in bakery for almost 25 years.  The department head has been there for over 35 years.  What's really bad is the guy admitted that we're one of the best bakeries when it comes to shrink.  With the exception of sweet goods (which all get marked down the day after they're baked), we never mark down any of our bread unless maybe it's around a holiday and we baked too much.  However, usually I can tell by how fast something is selling if I need to slack off on it.  Not only is our shrink real low, but we also have full shelves.  So instead of leaving us alone with something that works, they want to screw it up just because.

 I totally feel for you. Sounds like your bakery dept is doing things exactly right for your store. And they should leave things alone. But sounds like they want you to turn into how my store is. I mean I get we are a Marketplace now. But even though we have a set bake list that no longer gets tweaked unless as you said it's around the holidays or for orders. But I still think our shrink is too high. We over produce most days. And even though we do enough to fill the floor and have some for back up. I still feel we are chucking out too much product at times. And sometimes the display tables are totally never ending either. I wish you luck on wrangling in your "New" way of doing CAP.

This is something that Kroger does that just drives me crazy! What, you might ask?)  They (i.e. the corporate people, whoever they are,  who come up with alot of the new rules, guidelines, ideas, paperwork, etc) seem to think that the best way to get a job done is to constantly document everything you do on paper, as if we should always have a big "paper trail" following us around, about everything. And that paperwork takes TIME TIME TIME TIME TIME away from doing the actual WORK that needs to get done!!!!!

 It's like they assume everybody is so stupid they have to document everything, fill out charts, etc. for every little thing. It's the mindset of people who are "desk job junkies", who think that every problem is best solved by PAPERWORK.  (You know, the kind of People who sit in their comfy chairs at their desks and might break out in a terrible sweat if they actually performed some serious physical work like so many of us here in the store do every day).

 They don't seem to understand that a properly trained, knowledgeable employee who has worked for Kroger for a long time, and has had experience with many different situations coming up, will, in most instances,  instinctively KNOW what the best route to take would be. They are adaptable. They already know their job and, if things get a bit hairy now and then,  no big deal, they can tweak things a bit here and there as the day goes along.
