Question about leftovers:  For the deli grab& go case, at my first store we were instructed on the next day, to scan out all leftovers as outdated.  The leftovers could not be reused for anything because out dates from the sales floor could not be used per health code law.  At my new store, we are being instructed to use what leftovers we can for trays, weekenders, etc., then scan out the rest as outdated.  

Any thoughts as to what is right?R

Unless things have changed, the first one is right. It's supposed to be scanned out as outdated per health code law.

I remember we asked the guy from the department of health about the cold-to-go chicken/ribs that we had in the fridge. He said that if there were to be a small power outage, the fridge would probably not be able to keep the chickens out of the danger zone long enough, and thus would have to be tossed. I would think that if it's stored in the grab-and-go case, and there were to be a power outage, those would be the first things that would go.

I remember when we had a storm and our power was cut, everything that could be moved to the coolers and freezers were moved there because they could at least stay cool in there until the generators kicked in.

So yeah, when in doubt, throw it out.

We ALWAYS distress out deli foods that needs to be prepared. We offer it to our employees at a major discount if they want it. If not it gets tossed out. We do not resell it the next day for health reasons
