Ran into a old co worker from my old Krogers meat dept. the other day and asked him why they were closing up at 5:45 pm? He said they don't have any help to stay open. The bakery was already completely closed and the deli employee was closing up. Are the service departments closing early at your stores? When I worked at Kroger they wouldn't let us close up the deli a minute before 9 pm.
Sometimes we only have two people working in the bakery. If both of them have tasks that have to be completed at a certain time, then the last one might leave by 4:30. Besides, with the amount of scratches we've had, there's not much to make and put out. We can't get get in any cinnamon roll or Danish dough.
Staffing is an issue, but its interesting that even with this issue the Store MGRS haven't been directed to mover staffing back. Remember when "Prime Time" was one of the most important things, not I guess closing at 6pm is perfectly fine because of "Staffing" issues. In reality, why doesn't the company look at that is "pushed" onto the evening Associates as one of the issues? 2 People to close down the Department and help Customers... But 3+ to open the department?
Times are subject to change depending upon staffing. Some stores close when last staff member leaves for day. Or it isn't uncommon to have deli closed for days on end as well. My store repeatedly had the deli closed for up to 3+ days at a time for quite a while until kroger admitted they needed a hiring event.
If companies can run full hours: most bakeries close between 8 pm and 10 pm. Starting the closing process 30-40 min before.

With staffing and the labor market changing you would think the business would take a harder look at the current department structures and determine what really isn't needed. In reality, Bakery shouldn't be a "Service Department" anymore and it should simple be a self service "destination". Cake orders should be simplified and taken by the Deli, or Self Service Kiosk. With COVID being the "excuse" Salad Bars and most self service open container foods are going bye..bye. I'm really surprised Floral Departments service counters haven't also been eliminated, but then again Floral isn't as labor demanding. Hell, I'm surprised Meat Departments still have equipment in the backroom, since "prepacked" has been in the works for Meat for years.

Its a combination of several things. They're cutting hours down so low its almost not sustainable. Bakery closes by 2 pm. The deli sometimes close at 2 pm because they don't have enough people. Meat is open until 7 pm or 8 pm because I make the night time guy keep it open.
