My online schedule says that Im off on Saturday, which leaves me with a total of 40 hours. But the schedule posted on the wall has me working on Saturday, which gives me a total of 48 hours. So which one is considered the correct schedule?
The paper schedule is the official schedule. If you have no desire to work a certain day or time you need to bring it up with the person making the schedule to see if you can work something out.

Take a pic of the online schedule and the paper one and ask. Do not just take it off as they can and will get you for it. Just explain that you already made plans being as the online schedule has you off that day.
if your checking schedule online there is a blue box below online schedule that says The posted wall schedule is the official schedule. This schedule might not reflect the most up-to-date changes. Questions? Contact your supervisor

write you up for not following the schedule
Then the desk would be filled with unsigned write up waiting to be shredded. I follow the online schedule mainly because no one answers the phone half the time, and why should I drive down to get my schedule when I can get it online?
