You would think with the shortage of workers everywhere there'd be a LOT more sensitivity training going on, but if anything, the bullying has stepped up instead of chilled out.
If you choose to stay, document everything---details of the abuse, times and dates. Get witnesses where you can. Start with your union rep. That's what they're there for.

If it's an ongoing issue you can file an ethics report and union grievance for harassment.
If the individual is whistle blowing info about stuff that is immorally occurring at the store level they too have protection laws.
This type of thing needs to be delicately handled and I think to handle the case carefully you need to gage order this info online as to not blow it out of proportion further.
