The new bakery section opened in January. It's huge. Before we expanded, our budget was around $12,000 or more per week. It's probably more now. Anyway, we are slowly sinking because they didn't hire any help before the expansion. We're short about 100 hours. We have one full time decorator and two full time bakers, but one of them is on sick leave. We also have a part time decorator. That's it: three people in the whole department. We have to pull people from the deli just to get the bare minimum done.
I would look and see what other bakery depts. use in hours for the sales you do. I would ask your MR/coordinator or look at the zone sales. Or visit another store and ask the head bakery.
We have 6 people (3 full time, 2 of which can bake, the other is the dept. head, and 3 part time, 1 of which can bake). We don't really have anyone who is a main decorator, as most of the dept. has pitched in on making cakes before.
And i'm only in a $80k-100k a day sales for the whole store type store. I don't have exact numbers but we probably make roughly $7000 a week.
We get anywhere from 172-180 hours a week on ELMS.
I'm sorry for all this, your store management sounds retarded.
