What do I do when there isn't enough chicken or sides out to last until close and others who have worked there longer than me say "Don't worry about it"? I see there's not enough so I know the others do as well. Being a peon right now, there isn't much I can say. They just start shutting things off and getting them ready to clean. Then management comes and says something about it, but doesn't do anything serious enough to change it. I'm not sure what to do. I'm still the peon. I can't change what the others do and have no seniority to change it.

As long as you're not the who's going to get into trouble for it, I wouldn't worry about it. Whoever is in charge for the day is the one who's responsible for seeing it gets done. Now if they come and tell you to take care of it, then do so. Otherwise, let it go. Just try not to put yourself in a situation where you have to explain to a customer why there isn't any chicken on a Sunday of all days. If someone does ask, refer them to the person in charge.
It's up to your department head, assistant department head or (if both are off), then the designated person in charge (usually the one with the most experience/seniority) to make those calls and not you. You only need to do what is expected of you and complete the tasks that you are responsible for. If management and/or a customer wants to know why you don't have something out, that's when you call upon the person that's in charge to explain why things are the way they are.
