Is there anything written in black and white stating that if you are full time then you must have open availability

It's retail. Count on it. That's the industry standard.

Which is 1 reason why I don't work retail any more biggrin

I only work my availability. They tries to schedule me outside it a few times, but I've always stuck to what my availability is.
