It's not hard as long as you have a steady hand. Bakery is a much different environment than meat tho. So much drama comes from there.
It all depends on the type of crew you have. Our bakery staff is four women and two men. The men do the bread and donuts and put away the frozen order. The women do the cakes and put out the pre-made stuff. There's also stuff like baking cookies and pies and packaging stuff, but everyone shares in the responsibility of getting it done. Everyone gets along just fine. The deli is a different story. It's nearly all women. I think there's only two guys and at least a dozen women. Every day one of them is always fussing about something.

What exactly do you mean by head baker? Are you talking about being the bakery department leader? The bakery leader is responsible for doing all the scans, putting on orders, and making sure things get done. It's basically the same as meat department leader but with different stuff. If your store does have an actual "head baker" position, then that's about baking bread and other things. Cake decorating doesn't fall under the category of baking. In all my years I've learned the bakers bake and decorators decorate. Both jobs are full day jobs. So there's little chance of crossover. By the way, our bakery department leader can't decorate a cake or bake bread. If the decorator is off, you don't take cake orders. If the baker is off, you don't have bread.
